The crustless cheesecake of La Viña bar in San Sebastián — baked fast in a very hot oven so the outside caramelises to near-black while the inside stays soft and creamy. The crumpled paper lining is part of the look.

Steps

  1. 1
Heat the oven to 220°C (200°C fan). Crumple two overlapping sheets of baking paper, flatten them out and press them into a 23 cm springform tin so they stand 5 cm above the rim.
  2. 2
Beat the cream cheese and sugar on low speed for about 2 minutes, until smooth and the sugar has dissolved.
  3. 3
Add the eggs one at a time, beating on low after each just until blended.
  4. 4
Beat in the cream, salt and vanilla, then sift in the flour and mix just until smooth. Keep the speed low throughout: beaten-in air makes the cake puff and crack.
  5. 5
Pour the batter into the tin and bake for 50–60 minutes, until the top is a deep, almost burnt brown and the centre wobbles loosely when the tin is nudged.
  6. 6
Cool in the tin on a rack for at least 2 hours; it sinks as it cools, which is how it should be.
  7. 7
Serve at room temperature for a soft, creamy centre, or chill overnight for a firmer slice.
