Steps

  1. 1
Mix the flour, yeast, sugar and salt in a large bowl.
  2. 2
Whisk the lukewarm milk with the egg yolks, melted butter and vanilla, then pour into the flour and whisk to a smooth, thick batter.
  3. 3
Cover and leave in a warm place for 1 hour until bubbly and almost doubled.
  4. 4
Stir in the sparkling water. Whisk the egg whites to stiff peaks and fold them in gently in two additions, keeping as much air as possible.
  5. 5
Leave the batter to stand for 10 minutes while you heat a deep-pocketed Belgian waffle iron until very hot, then brush it lightly with oil.
  6. 6
Ladle in enough batter to just fill the grid, close and cook for 4–5 minutes without opening, until the steam almost stops and the waffle is deep golden and releases easily — opening early tears it.
  7. 7
Lift onto a wire rack rather than a plate, so the steam escapes and the outside stays crisp; keep finished waffles warm in a 100°C oven in a single layer.
  8. 8
Serve hot, dusted with icing sugar, with whipped cream, fruit or chocolate sauce.
