White peach purée and Prosecco, invented at Harry's Bar in Venice — two ingredients and no shortcuts.

  • 100 ml Prosecco, chilled

    Blanch ripe white peaches for 30 seconds, slip off the skins and blend the flesh to a smooth purée. Yellow peaches or nectar will not give the right colour or delicacy.

    Chill the purée thoroughly — both components must be cold or the drink foams over.

    Pour the purée into a chilled flute.

    Add the Prosecco slowly in two stages, letting the foam subside between them.

    Stir once, very gently, with a bar spoon and serve immediately. No garnish.
