Steps
Steps
- 1Put the berries, sugar and water in a small pan over medium heat.
- 2Bring to a simmer and cook for 5 minutes, stirring, until the fruit collapses and the sugar dissolves. Don't cook it longer: the colour dulls and it starts to taste of jam.
- 3Blend the fruit with a stick blender, then push it through a fine sieve with the back of a ladle, scraping the underside, to remove the seeds.
- 4Stir in the lemon juice, taste and add a little more sugar if the berries were sharp.
- 5Leave to cool, then chill. It thickens slightly as it cools and keeps for five days in the fridge or three months in the freezer.
