Steps
Steps
- 1Heat the oven to 180°C (160°C fan) and line a baking tray with baking paper.
- 2Mix the flour, sugar, baking powder and salt in a bowl. Whisk the 2 eggs with the vanilla and orange zest and stir them in, then add the almonds and work everything into a firm, sticky dough with your hands.
- 3Divide the dough in two and, with lightly floured hands, shape each half on the tray into a log about 4 cm wide and 25 cm long, well apart. Brush with the beaten egg.
- 4Bake for 25 minutes, until golden and firm but not hard. Cool for 10 minutes and lower the oven to 150°C (130°C fan).
- 5Cut the logs on the diagonal into 1 cm slices with a serrated knife, using one firm stroke so the almonds do not tear the biscuits.
- 6Lay the slices cut-side down on the tray and bake for 10 minutes on each side, until dry and pale golden.
- 7Cool completely on a rack; they crisp as they cool and keep for a month in a tin.
