Steps

  1. 1
Dissolve the yeast and sugar in 300 ml of the warm milk, whisk in both flours to a thick batter, cover and leave somewhere warm for 1 hour, until bubbly and doubled.
  2. 2
Whisk in the egg yolks, the salt, 30 g of the melted butter and the remaining milk until the batter is smooth and about as thin as single cream. Leave for 30 minutes more.
  3. 3
Whisk the egg whites to soft peaks and fold them gently into the batter.
  4. 4
Heat a 20 cm frying pan over medium-high heat and wipe it with a little of the oil. Pour in a small ladle of batter and swirl it to coat the base thinly.
  5. 5
Cook for 60–90 seconds, until the surface is set and full of holes and the underside golden, then flip and cook for 30 seconds more.
  6. 6
Stack the blini on a warm plate, brushing each with the remaining melted butter; wipe the pan with oil every few blini.
  7. 7
Serve warm, folded into quarters, with the sour cream, salmon roe and dill.
