- 100 g mayonnaise
- 80 ml buttermilk
- 1 tbsp white wine vinegar
- 1 tsp Worcestershire sauce
- 1 pieces garlic clove, grated

- 2 tbsp chives, chopped

- 1Use a firm, strongly flavoured blue — Roquefort, Stilton or Danish blue. A mild creamy one disappears entirely.
- 2Mash about two thirds of the cheese with the vinegar and a splash of the buttermilk into a rough paste. This is what gives the dressing its blue-cheese body.
- 3Whisk in the soured cream and mayonnaise until smooth.
- 4Thin with the remaining buttermilk to the consistency you want — thicker for dipping, looser for dressing leaves.
- 5Add the Worcestershire sauce, grated garlic and a generous amount of black pepper.
- 6Fold in the remaining crumbled cheese at the end so there are still distinct lumps.
- 7Chill 2 hours before serving; it thickens and the flavour deepens. Add salt only after chilling, as the cheese is already salty.
