Chunky blue cheese in a buttermilk and soured cream base — thick enough to cling to a wedge or a wing.

  • 180 g blue cheese, crumbled
  • 150 g soured cream
  • 100 g mayonnaise
  • 80 ml buttermilk
  • 1 tbsp white wine vinegar
  • 1 tsp Worcestershire sauce
  • 1 pieces garlic clove, grated
  • 0.75 tsp black pepper
  • 2 tbsp chives, chopped

    Use a firm, strongly flavoured blue — Roquefort, Stilton or Danish blue. A mild creamy one disappears entirely.

    Mash about two thirds of the cheese with the vinegar and a splash of the buttermilk into a rough paste. This is what gives the dressing its blue-cheese body.

    Whisk in the soured cream and mayonnaise until smooth.

    Thin with the remaining buttermilk to the consistency you want — thicker for dipping, looser for dressing leaves.

    Add the Worcestershire sauce, grated garlic and a generous amount of black pepper.

    Fold in the remaining crumbled cheese at the end so there are still distinct lumps.

    Chill 2 hours before serving; it thickens and the flavour deepens. Add salt only after chilling, as the cheese is already salty.
