  • 250 g ground beef
  • 150 g ground pork
  • 1 piece onion
  • 1 piece carrot
  • 1 piece celery stalk
  • 2 pieces garlic cloves
  • 400 g canned chopped tomatoes
  • 120 ml whole milk
  • 120 ml dry white wine
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 piece bay leaf
  • 1 pinch nutmeg

    Finely dice onion, carrot, and celery (soffritto). Mince garlic.

    Warm oil in a large heavy pan over medium heat. Cook soffritto for 8 minutes until soft and golden.

    Add minced meat and cook, breaking it up, until no pink remains.

    Pour in the wine and cook until fully evaporated.

    Add tomatoes, milk, bay leaf, nutmeg, salt, and pepper. Stir and simmer on very low heat for at least 2 hours (ideally 3), stirring occasionally. Add a splash of water if it dries out.
