Flour Halva
An old Bulgarian village sweet made from pantry staples — plain flour toasted in oil to the colour of milky coffee, then bound with hot syrup into a soft, fudgy halva shaped with a spoon. It is cooked for memorial days and during the fasts.

Steps
Steps
- 1Bring the water and sugar to the boil, stirring until the sugar dissolves, simmer for 3 minutes and keep the syrup hot.
- 2Heat the oil in a wide, heavy pan over medium-low heat, add the flour and stir constantly for 20–25 minutes, until it turns the colour of milky coffee and smells of biscuits. Scrape the bottom all the time — flour that catches makes the whole halva bitter.
- 3Stir in the walnuts for the last 2 minutes.
- 4Take the pan off the heat and pour in the hot syrup in a thin stream, stirring hard; it hisses and steams, so pour slowly.
- 5Return to low heat and stir for 3–4 minutes, until the mixture gathers into a soft mass that leaves the sides of the pan.
- 6Stir in half the cinnamon and leave for 10 minutes, until cool enough to handle.
- 7Shape the halva into ovals with two tablespoons dipped in water and arrange them on a plate, or press it into a dish and cut it into diamonds.
- 8Dust with the remaining cinnamon and serve at room temperature.
