Steps
Steps
- 1Core the tomatoes, cut them into small dice and drain off the watery seeds in a sieve, so the toast doesn't go soggy.
- 2Toss the tomatoes with 3 tbsp of the oil, the torn basil, salt and pepper and leave for 10 minutes for the juices to gather.
- 3Grill or griddle the bread over high heat for 1–2 minutes per side, until crisp and charred at the edges.
- 4While the toast is still hot, rub one side of each slice with the cut garlic — the rough surface grates it finely.
- 5Drizzle the bread with the remaining oil.
- 6Spoon the tomatoes on just before serving, so the toast stays crisp, and finish with a pinch of flaky salt.
