Steps

  1. 1
Heat the oven to 200°C/400°F. Peel the sweet potato and cut it into 2 cm cubes; pat the chickpeas dry. Toss both with the oil, paprika, cumin and salt and spread in a single layer on a large baking tray.
  2. 2
Roast for 25–30 minutes, turning once, until the sweet potato is caramelised at the edges and the chickpeas are crisp.
  3. 3
Meanwhile, rinse the quinoa, cover with 300 ml of the water, add a pinch of salt and simmer, covered, for 15 minutes. Take off the heat, leave covered for 5 minutes and fluff with a fork.
  4. 4
Shred the cabbage finely, cut the carrot into matchsticks and slice the avocado.
  5. 5
Whisk the tahini with the lemon juice, garlic and a pinch of salt, then whisk in the remaining water a spoonful at a time. It will seize and thicken at first, then loosen into a pourable dressing.
  6. 6
Divide the quinoa among four bowls and arrange the sweet potato, chickpeas, cabbage, carrot, spinach and avocado on top in separate sections, so every forkful is different.
  7. 7
Drizzle with the tahini dressing and sprinkle with the sesame seeds.
