Steps
Steps
- 1Stir the yeast and sugar into the lukewarm milk (about 37°C) and leave for 10 minutes until foamy.
- 2Sift the flour and salt into a bowl, make a well and add the yeast mixture, yoghurt and egg.
- 3Mix into a soft, slightly sticky dough and knead with oiled hands for 5 minutes until smooth; it should be softer than bread dough.
- 4Cover and leave in a warm place for about 1 hour, until doubled.
- 5Heat the oil in a deep pan to 170°C — a pinch of dough dropped in should rise to the surface at once with a steady sizzle.
- 6With oiled hands, pinch off walnut-sized pieces, stretch them into rough discs about 1 cm thick and lower them into the oil a few at a time.
- 7Fry for 1–2 minutes a side, turning once, until puffed and deep golden; if the oil is hotter, they brown before the middle cooks.
- 8Drain on kitchen paper and serve warm, dusted with icing sugar or with honey, jam or crumbled sirene.
