Not the Greek version — Bulgarian moussaka layers cubed potato with minced pork and finishes under a set yogurt-and-egg topping.

  • 1.2 kg potatoes, cubed
  • 500 g minced pork
  • 2 pieces onions, diced
  • 1 pieces carrot, grated
  • 2 pieces tomatoes, grated
  • 1 tbsp paprika
  • 1 tsp savory (chubritsa)
  • 400 g plain yogurt
  • 3 pieces eggs
  • 2 tbsp plain flour
  • 4 tbsp sunflower oil

    Soften the onion and carrot in the oil, then add the mince and brown it well.

    Stir in the grated tomato, paprika and savory and cook 5 minutes. Season.

    Fold the cubed potato through the meat and transfer to a deep baking dish.

    Pour in hot water to come about two-thirds up the mixture, cover with foil and bake at 190C for 45 minutes.

    Uncover and bake another 15 minutes until the liquid has mostly gone and the top is colouring.

    Whisk the yogurt with the eggs and flour until smooth, pour over the top and spread level.

    Return to the oven for 15-20 minutes until the topping is set and golden. Rest 15 minutes before cutting.
