Steps
Steps
- 1Heat the oil in a wide pan over medium heat and soften the onion, carrot and celery for 8 minutes without browning.
- 2Add both minces, raise the heat and cook for 8 minutes, breaking them up, until browned. Pour in the wine and let it evaporate.
- 3Stir in 200 g of the passata, season with salt and pepper and simmer gently for 25 minutes, until thick and dry enough to hold its shape. Cool for 10 minutes, then mix in the egg and half the Parmesan.
- 4For the béchamel, melt the butter in a saucepan, stir in the flour and cook for 1 minute, then whisk in the milk gradually and simmer for 5 minutes until it coats a spoon. Season with salt and the nutmeg.
- 5Heat the oven to 190°C. Season the remaining passata and spread it over the base of a baking dish about 25 × 35 cm.
- 6Fill the dry cannelloni tubes with the meat using a teaspoon or a piping bag and lay them side by side on the sauce.
- 7Pour over the béchamel so every tube is covered — any exposed pasta stays hard — and scatter with the remaining Parmesan.
- 8Cover with foil and bake for 25 minutes, then uncover and bake for 15–20 minutes more, until golden and bubbling. Rest for 10 minutes before serving.
