Steps

  1. 1
Toss the aubergine with 1 tsp of salt and leave in a colander for 30 minutes, then pat dry.
  2. 2
Heat 6 tbsp of the oil in a wide pan over medium-high heat and fry the aubergine in batches for 6–8 minutes, until golden and soft. Drain on kitchen paper.
  3. 3
Add the remaining oil to the pan and cook the onion and celery over medium heat for 8 minutes, until the onion is soft but the celery still has a little crunch.
  4. 4
Add the passata, olives and capers and simmer for 10 minutes.
  5. 5
Stir in the vinegar and sugar and cook for 2 minutes, until the sharp smell of the vinegar softens.
  6. 6
Fold in the aubergine and simmer gently for 5 minutes so it takes up the sauce. Taste: it should be clearly sweet and sour, so adjust with salt, sugar or vinegar.
  7. 7
Cool to room temperature, ideally resting it for a few hours or overnight, then scatter with the pine nuts and torn basil to serve.
