Steps
Steps
- 1Mix the hoisin sauce, both soy sauces, the Shaoxing wine, 2 tbsp of the honey, the sugar, five-spice, garlic and sesame oil. Set 4 tbsp of the mixture aside in the fridge for the glaze.
- 2Prick the pork all over with a fork, coat it in the rest of the marinade and refrigerate for at least 8 hours, ideally 24, turning once.
- 3Heat the oven to 220°C (200°C fan). Pour the hot water into a roasting tin and set a rack over it: the water stops the dripping honey from burning and smoking.
- 4Lift the pork onto the rack, letting the excess marinade drip off, discard what is left in the bowl, and roast for 25 minutes.
- 5Mix the reserved marinade with the remaining 2 tbsp honey. Turn the pork, brush it thickly with this glaze and roast for another 15 minutes.
- 6Brush again and roast for 5–10 minutes more, or finish under a hot grill, until the edges blacken in spots. Those charred edges are the point of the dish.
- 7Rest the pork for 10 minutes, slice it across the grain, brush the slices with any glaze left and serve with the rice and cucumber.
