North African marinade of coriander, cumin, garlic and preserved lemon — made for fish above all.

Ingredients

  • 60 g fresh coriander
  • 40 g flat-leaf parsley
  • 4 pieces garlic cloves
  • 2 tsp ground cumin
  • 2 tsp sweet paprika
  • 1 pieces preserved lemon
  • 3 tbsp lemon juice
  • 120 ml olive oil
  • 0.5 tsp chilli flakes
  • 0.25 g saffron threads

    Steep the saffron in a tablespoon of warm water for 10 minutes.

    Toast the cumin briefly in a dry pan if using whole seeds, then grind.

    Rinse the preserved lemon, discard the pulp and chop the peel very finely — the peel is where the flavour is; the pulp is just salt.

    Pound the garlic with a pinch of salt to a paste.

    Chop the herbs by hand rather than blitzing them, so the chermoula stays loose and green rather than becoming a dark purée.

    Combine the herbs, garlic, spices, preserved lemon and saffron water.

    Stir in the olive oil and lemon juice and season. Use half as a marinade for fish, and keep the rest raw to spoon over at the table.
