Steps
Steps
- 1Mix the soy sauce, garlic, bay leaves and peppercorns, coat the chicken and marinate for 1 hour, or overnight in the fridge.
- 2Put the chicken and its marinade in a heavy pan with the water and bring to the boil.
- 3Pour in the vinegar and do not stir for the first 5 minutes; letting it boil undisturbed for a while takes the harsh edge off, as Filipino cooks do.
- 4Cover and simmer for 30 minutes, turning the chicken once, until tender.
- 5Lift out the chicken, add the sugar to the pan and boil the sauce for 8–10 minutes until reduced by half and slightly syrupy.
- 6Meanwhile pat the chicken dry and brown it skin side down in the oil in a frying pan for 5 minutes until crisp.
- 7Return the chicken to the sauce and turn it to coat. Scatter with the spring onions and serve with the rice, spooning the sauce over.
