Steps

  1. 1
Season the chicken all over with salt and pepper and leave for 15 minutes while you prepare the vegetables.
  2. 2
Heat the oil in a wide casserole over medium-high heat and brown the chicken skin-side down for 6–7 minutes until deep golden, then turn for 2 minutes more. Lift out.
  3. 3
Pour off all but 2 tbsp of the fat, add the onion and pepper and cook over medium heat for 6 minutes until soft.
  4. 4
Add the mushrooms and garlic and cook for 4 minutes, until the mushrooms colour.
  5. 5
Pour in the wine and let it bubble for 2 minutes, scraping the bottom, then add the tomatoes and rosemary.
  6. 6
Return the chicken and its juices, skin-side up so the skin stays above the sauce. Cover and simmer gently for 35 minutes.
  7. 7
Uncover, add the olives and simmer for 10 minutes more, until the sauce has thickened and the meat is tender to the bone.
  8. 8
Remove the rosemary stalks, taste for salt and pepper and serve hot from the pan.
