Steps

  1. 1
Heat the fat in a heavy casserole over medium heat and fry the onions for 10 minutes until soft and golden.
  2. 2
Take the pan off the heat and stir in the sweet and hot paprika — off the heat, so the paprika doesn't scorch and turn bitter.
  3. 3
Return to the heat, add the chicken, peppers, tomato, 1 1/2 tsp of the salt and the hot water, cover and simmer for 40–45 minutes, turning the chicken once, until tender.
  4. 4
Meanwhile make the nokedli batter: beat 300 g of the flour with the eggs, cold water and 1 tsp of the salt into a thick, sticky batter that drops slowly from a spoon, and rest it for 10 minutes.
  5. 5
Bring a large pan of water to the boil with the remaining salt. Press the batter through a nokedli maker or the holes of a colander into the water, cook for 2–3 minutes after the dumplings float, then drain and toss with the butter.
  6. 6
Whisk the sour cream with the remaining 20 g of flour and a ladle of the hot sauce, stir it into the pot and simmer gently for 3–4 minutes until thickened; don't let it boil hard or it splits.
  7. 7
Serve the chicken and its sauce over the nokedli.
