- 1Preheat oven to 200 °C (400 °F).
- 2Pound chicken breasts to even 1-cm thickness.
- 3Set up three shallow dishes: flour, beaten eggs, breadcrumbs mixed with parmesan and herbs.
- 4Season chicken with salt and pepper. Dredge in flour, dip in egg, coat in breadcrumb mix.
- 5Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken 3 min per side until golden.
- 6Spoon marinara over each cutlet and top with mozzarella.
- 7Transfer to oven and bake 15-20 min until cheese is melted and bubbly.
- 8Garnish with fresh basil and serve with spaghetti.
