Steps
Steps
- 1Slice each breast in half horizontally, then pound the pieces between two sheets of cling film to an even 1 cm, so they cook through in minutes without drying out.
- 2Season the escalopes with salt and pepper, dust them in the flour and shake off the excess.
- 3Heat the oil and 15 g of the butter in a large frying pan over medium-high heat and fry the chicken for 3 minutes per side, until golden and cooked through. Transfer to a warm plate.
- 4Lower the heat, add the garlic for 30 seconds, then pour in the wine and scrape up the browned bits as it bubbles for 1 minute.
- 5Add the stock, lemon juice and capers and boil for 3–4 minutes, until reduced by half.
- 6Take the pan off the heat and swirl in the remaining cold butter a piece at a time, until the sauce turns glossy and slightly thickened.
- 7Return the chicken and its juices to the pan, turn the pieces in the sauce, scatter with the parsley and serve at once.
