Steps

  1. 1
Heat the oil in a deep frying pan to 180°C and fry the tortilla wedges in batches for 1–2 minutes until crisp and golden. Drain on kitchen paper and salt lightly. Day-old tortillas fry crisper and soak up less oil.
  2. 2
Toast the chillies in a dry pan for 20 seconds a side, pull out the stems and seeds and soak them in the boiling water for 15 minutes.
  3. 3
Blend the chillies and their soaking water with the tomatoes, half the onion, the garlic and a good pinch of salt until smooth.
  4. 4
Pour all but 1 tbsp of the oil out of the pan into a heatproof bowl. Fry the sauce in the pan over medium heat for 8–10 minutes until slightly thickened and darker.
  5. 5
In a second pan, fry the eggs in a little of the poured-off oil until the whites are set and the yolks still runny.
  6. 6
Add the tortilla chips to the simmering sauce and toss for 1 minute, so they are coated but keep some crunch; left to sit, they turn mushy.
  7. 7
Divide among plates and top each with a fried egg, the cheese, soured cream, sliced onion and coriander. Serve at once.
