Steps
Steps
- 1Cook the noodles for 1 minute less than the packet says, rinse them under cold water and drain very well. Spread them out to dry for 10 minutes: wet noodles steam instead of frying.
- 2Toss the chicken with 1 tbsp of the light soy sauce and the cornflour.
- 3Mix the remaining light soy sauce with the oyster sauce, dark soy sauce, sugar, sesame oil and white pepper in a small bowl.
- 4Heat 1 tbsp of the oil in a wok until smoking, stir-fry the chicken for 3 minutes until just cooked and lift it out.
- 5Add another 1 tbsp of oil with the garlic, carrot and cabbage and stir-fry for 2 minutes.
- 6Add the last of the oil and the noodles, spread them over the wok and leave them for 1 minute to crisp in places before tossing.
- 7Return the chicken, splash the Shaoxing wine around the hot rim of the wok, add the sauce, beansprouts and spring onions, and toss for 1–2 minutes until the noodles are evenly coloured. Serve at once.
