Spain's breakfast and late-night snack — ridged sticks of piped flour-and-water dough fried until crisp, rolled in cinnamon sugar and dunked in thick hot chocolate. The star nozzle matters: the ridges stop the dough bursting in the oil.

Steps

  1. 1
Bring the water, salt and 1 tbsp oil to the boil, tip in all the flour at once and beat hard with a wooden spoon for 1 minute until you have a smooth, stiff dough with no dry patches.
  2. 2
While it is still warm, spoon the dough into a strong piping bag fitted with a 1 cm open star nozzle and leave it to cool for 10 minutes.
  3. 3
Mix the 50 g sugar with the cinnamon on a plate.
  4. 4
For the chocolate, whisk the cornflour into 100 ml of the cold milk. Heat the rest of the milk until steaming, take it off the heat and stir in the chocolate and 1 tbsp sugar until melted.
  5. 5
Whisk in the cornflour mixture and cook over low heat, stirring, for 3–4 minutes, until it coats the back of a spoon thickly. Keep warm.
  6. 6
Heat the frying oil in a deep pan to 180°C. Pipe 12 cm lengths straight into the oil, snipping them off with scissors, four or five at a time.
  7. 7
Fry for 2–3 minutes, turning once, until deep golden and crisp. Drain briefly on kitchen paper.
  8. 8
Roll the hot churros in the cinnamon sugar and serve at once with cups of the hot chocolate for dipping.
