Roasted red peppers stuffed with an egg-and-sirene filling, floured, battered and fried until blistered and golden.

  • 8 pieces long red peppers
  • 300 g Bulgarian sirene, crumbled
  • 3 pieces eggs
  • 3 tbsp parsley, chopped
  • 100 g plain flour
  • 300 ml sunflower oil, for frying
  • 0.5 tsp black pepper

    Roast the peppers until the skins blister, then seal them in a covered bowl for 10 minutes and slip the skins off.

    Slit each pepper down one side and remove the seeds, keeping the stem and shape intact.

    Mash the sirene with one egg, the parsley and black pepper.

    Fill each pepper with the cheese mixture and press the slit closed.

    Beat the remaining two eggs in one bowl and put the flour in another.

    Roll each pepper in flour, then egg, then flour again.

    Fry in hot oil 2 minutes per side until golden. Drain on paper and serve warm.
