- 3 pieces eggs
- 3 tbsp parsley, chopped
- 100 g plain flour
- 300 ml sunflower oil, for frying
- 0.5 tsp black pepper

- 1Roast the peppers until the skins blister, then seal them in a covered bowl for 10 minutes and slip the skins off.
- 2Slit each pepper down one side and remove the seeds, keeping the stem and shape intact.
- 3Mash the sirene with one egg, the parsley and black pepper.
- 4Fill each pepper with the cheese mixture and press the slit closed.
- 5Beat the remaining two eggs in one bowl and put the flour in another.
- 6Roll each pepper in flour, then egg, then flour again.
- 7Fry in hot oil 2 minutes per side until golden. Drain on paper and serve warm.
