Cinnamon Rolls
The American bakery classic — soft, buttery yeasted dough rolled around brown sugar, butter and cinnamon, baked snug in one tin and spread warm with cream cheese frosting. Rolling tightly and proving fully gives tall, pull-apart swirls.

Steps
Steps
- 1Whisk the warm milk, yeast and caster sugar and leave for 5 minutes until foamy. Whisk in the egg and melted butter.
- 2Add the flour and salt and knead for 8–10 minutes into a soft, smooth, slightly tacky dough. Cover and leave to rise somewhere warm for 1–1½ hours, until doubled.
- 3Mix the soft butter, brown sugar and cinnamon into a spreadable paste.
- 4Roll the dough out on a lightly floured worktop to a 30 × 45 cm rectangle. Spread the filling right to the edges, leaving a 2 cm strip clear along one long side.
- 5Roll up tightly from the other long side, pinch the seam to seal and cut into 12 slices with a sharp serrated knife.
- 6Arrange them cut-side up in a 23 × 33 cm baking tin lined with baking paper. Cover and prove for 45 minutes, until puffy and touching.
- 7Heat the oven to 180°C (160°C fan) and bake for 22–25 minutes, until golden; the middle roll should read 90°C on a thermometer.
- 8Beat the cream cheese, softened butter, icing sugar and vanilla until smooth.
- 9Let the rolls cool for 10 minutes, then spread with the frosting so it melts into the swirls. Serve warm.
