Chicken braised in red wine with bacon, mushrooms and onions — the farmhouse dish Escoffier made famous.

Ingredients

  • 1.5 kg chicken thighs and drumsticks
  • 750 ml red wine
  • 150 g smoked bacon lardons
  • 250 g pearl onions
  • 250 g button mushrooms
  • 300 ml chicken stock
  • 50 ml brandy
  • 2 tbsp plain flour
  • 3 pieces garlic cloves
  • 2 pieces bay leaves
  • 50 g butter

    Marinate the chicken in the wine with the garlic and bay overnight in the fridge. Drain, keeping the wine, and dry the pieces thoroughly.

    Render the lardons in a casserole, remove, then brown the chicken skin-side down in the fat until golden.

    Pour over the brandy and flame it, or simply let it boil off for 1 minute.

    Sprinkle in the flour and turn the pieces to coat.

    Add the reserved wine and the stock, bring to a simmer and cover.

    Braise at 160C for 1 hour 15 minutes.

    Brown the onions and mushrooms in the butter and add them, with the lardons, for the last 20 minutes.

    Lift out the chicken and reduce the sauce hard on the hob until it coats a spoon, then return everything and serve.
