Cornbread

The quick bread of the American South — a cornmeal and buttermilk batter poured into a smoking-hot buttered skillet, so it bakes with a crisp golden crust around a tender, crumbly middle. Serve it with chilli, stews and barbecue.

Steps
Steps
- 1Put a 25 cm cast-iron skillet or round cake tin in the oven and heat it to 220°C. A very hot pan is what gives the crisp crust.
- 2Whisk the cornmeal, flour, sugar, baking powder, bicarbonate of soda and salt in a large bowl.
- 3Melt the butter. Whisk the buttermilk with the eggs, then whisk in 60 g of the melted butter.
- 4Pour the wet mixture into the dry and fold with a spatula until just combined. A few lumps are fine; overmixing makes the bread tough.
- 5Take the hot skillet out with oven gloves, add the remaining butter and swirl it over the base and sides.
- 6Pour in the batter at once — it should sizzle at the edges — and smooth the top.
- 7Bake for 20–25 minutes, until risen and golden and a skewer pushed into the centre comes out clean.
- 8Cool in the pan for 10 minutes, then cut into wedges and serve warm.
