Steps
Steps
- 1Put the haddock in a wide pan with the milk and bay leaf, bring just to a simmer and poach 5 minutes, until it flakes. Lift out the fish and keep the milk.
- 2Melt the butter in a pot over medium-low heat and soften the onion for 8 minutes without colouring.
- 3Add the potatoes and the water, cover and simmer 15 minutes until soft.
- 4Mash about a third of the potatoes against the side of the pot to thicken the soup, leaving the rest in pieces.
- 5Strain in the poaching milk, discarding the bay leaf, and bring back to a gentle simmer.
- 6Flake the haddock into large pieces, discarding any skin and bones, and add it to the pot; heat through for 2 minutes without stirring hard, or the fish breaks into threads.
- 7Season with pepper, taste before adding salt — smoked fish is salty — and serve sprinkled with the parsley.
