- 1Preheat oven to 175C and grease a 23x13 cm loaf pan.
- 2Mash bananas thoroughly in a large bowl. Mix in almond milk, melted coconut oil, eggs, and vanilla extract.
- 3In a separate bowl, whisk together flour, baking soda, salt, brown sugar, and cinnamon.
- 4Add the dry ingredients to the banana mixture and stir until just combined.
- 5Pour batter into the prepared pan. Bake for 55 to 65 minutes until a toothpick inserted in the centre comes out clean.
- 6Cool in the pan for 10 minutes, then transfer to a wire rack.
