A classic Caesar salad with a bold, creamy dressing made entirely without dairy or anchovies. Crispy romaine, crunchy croutons, and punchy flavour.

Ingredients

Serves:4
  • 2 heads romaine lettuce
  • 1/2 cup raw cashews, soaked
  • 3 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 2 garlic cloves
  • 2 tbsp capers
  • 3 tbsp nutritional yeast
  • 3 tbsp olive oil
  • 60 ml water
  • 1 to taste salt and black pepper
  • 2 slices sourdough bread, cubed

    Make croutons: toss bread cubes with 1 tbsp olive oil and salt. Spread on a baking sheet and bake at 200C for 10 to 12 minutes until golden. Set aside.

    Make dressing: blend soaked cashews, lemon juice, Dijon mustard, garlic, capers, nutritional yeast, remaining olive oil, and water until completely smooth. Season generously with salt and pepper.

    Chop romaine lettuce into bite-sized pieces and dry thoroughly.

    Toss lettuce with dressing until well coated.

    Divide onto plates, top with croutons, and finish with a grind of black pepper.
