Incredibly creamy mashed potatoes made without a drop of butter or cream. Roasted garlic and olive oil create a deeply satisfying side dish.

  • 1 kg Yukon Gold potatoes
  • 4 garlic cloves
  • 4 tbsp olive oil
  • 120 ml oat milk, warmed
  • 1.5 tsp salt
  • 1/4 tsp white pepper
  • 2 tbsp fresh chives, chopped

    Peel and cube potatoes into 3 cm pieces. Place in a large pot, cover with cold salted water, and bring to a boil.

    Add garlic cloves to the pot. Cook for 15 to 20 minutes until potatoes are completely tender.

    Drain well and return potatoes and garlic to the pot. Allow steam to escape for 2 minutes.
