Steps
Steps
- 1Toast the Sichuan peppercorns in a dry pan over medium heat for 2 minutes until fragrant, then grind them finely.
- 2Heat the oil in a wok over high heat and fry the pork mince, breaking it up, for 6–8 minutes until it is brown and crisp and its fat has rendered out.
- 3Add the mustard greens, Shaoxing wine and dark soy sauce and fry for 1 minute more until dry. Set aside.
- 4Divide the light soy sauce, sesame paste, chilli oil, vinegar, sugar, garlic and half the ground pepper between four bowls and stir each into a smooth sauce.
- 5Cook the noodles in plenty of boiling water as the packet directs, adding the pak choi for the last minute, and drain.
- 6Pile the noodles and pak choi onto the sauce and top with the pork, peanuts, spring onions and the rest of the pepper.
- 7Toss at the table so the sauce coats every strand; it should cling, not pool, and the pepper should leave a light tingle on the lips.
