Steps
Steps
- 1Heat the milk slowly in a heavy pan, stirring so it doesn't catch, until it rises up the pan; lower the heat and simmer very gently for 5 minutes — this gives a thicker set.
- 2Take off the heat and leave to cool to 43–45°C (110–113°F): a finger dipped in should bear the heat for a count of ten.
- 3Whisk the starter with a ladleful of the warm milk until smooth, then stir it back into the pan.
- 4Pour into clean glass jars or a ceramic bowl, cover and wrap in a thick blanket or towels.
- 5Leave undisturbed in a warm place for 6–8 hours, until set like a soft custard and no longer runny when the jar is tilted.
- 6Chill for at least 4 hours before eating; the yoghurt firms up and the flavour sharpens.
- 7Set aside 2 tablespoons as the starter for the next batch.
