Doughnuts

Yeasted doughnuts fried until puffy and golden with the telltale pale ring around the middle, then dipped in a sugar glaze or piped with jam. Holding the oil at 175°C is what keeps them light rather than greasy.

Steps
Steps
- 1Mix the flour, yeast, sugar and salt in a large bowl. Add the lukewarm milk (about 37°C — hotter kills the yeast), the eggs and vanilla, and knead for 5 minutes.
- 2Add the soft butter a little at a time and knead for another 8–10 minutes until the dough is smooth, elastic and pulls away from the bowl; it will be soft and slightly tacky.
- 3Cover and leave in a warm place for 60–90 minutes until doubled in size.
- 4Knock back, roll out on a floured surface to 1.5 cm thick and cut rounds with an 8 cm cutter; cut a 3 cm hole in the centre of those you will glaze and leave the ones for jam whole.
- 5Set them on squares of floured baking paper, cover loosely and prove for 30–40 minutes until puffy and a gently pressed finger leaves a dent that springs back slowly.
- 6Heat the oil in a deep pan to 175°C. Use a thermometer — cooler oil makes greasy doughnuts, hotter oil browns them before the middle cooks.
- 7Fry 3–4 at a time for about 1 minute per side until deep golden, with a pale ring around the middle. Lift out with a slotted spoon and drain on kitchen paper.
- 8Whisk the icing sugar with the 3 tbsp milk to a thick, smooth glaze and dip the ring doughnuts in it while still warm; leave on a rack for 10 minutes to set.
- 9For the filled doughnuts, poke a hole in the side with a skewer and pipe in the jam once they have cooled slightly.
