Steps
Steps
- 1Dissolve the yeast and the teaspoon of sugar in the lukewarm water and leave for 10 minutes, until foamy.
- 2Beat it into the flour and salt to a thick, sticky batter and keep beating for 2 minutes. Cover and leave in a warm place for 1 hour, until full of bubbles.
- 3Heat the oven to 200°C and brush a 28 cm round tin with the oil. Pour in the batter and bake for 25–30 minutes, until golden and hollow-sounding when tapped.
- 4Turn out, cool and leave uncovered for several hours or overnight to dry out — fresh bread turns to mush in the syrup.
- 5Boil the sugar for the syrup with the water for the syrup and the cloves for 10 minutes and stir in the lemon juice.
- 6Set the bread round, top side up, in a wide pan, pour over the hot syrup and simmer over low heat for 15 minutes, spooning the syrup over it.
- 7Turn it carefully with two spatulas and simmer for 5–10 minutes more, until almost all the syrup is absorbed and the bread is dark amber and glossy. Lift out the cloves.
- 8Leave to cool to room temperature in the pan.
- 9Cut into wedges, top each with a spoonful of clotted cream and scatter with pistachios.
