Steps

  1. 1
Wash the spinach and wilt it in a large dry pan over medium heat for 2–3 minutes, with only the water clinging to the leaves. Drain, squeeze lightly and chop roughly.
  2. 2
Heat 3 tbsp of the oil in the same pan over medium heat and fry the bread and whole garlic cloves for 3–4 minutes, turning, until golden.
  3. 3
Pound the bread and garlic in a mortar with the cumin, paprika, vinegar and a pinch of salt into a thick paste, adding a splash of the water; a small blender works too.
  4. 4
Heat the remaining oil, add the chickpeas and fry for 2 minutes, then stir in the bread paste and the rest of the water.
  5. 5
Simmer for 5 minutes, stirring, until the sauce thickens and coats the chickpeas.
  6. 6
Add the spinach, warm through for 2 minutes and taste for salt and vinegar — it should be smoky with a gentle tang.
  7. 7
Serve hot or warm, in small earthenware dishes as a tapa or in bowls as a main course.
