Steps
Steps
- 1Blitz 150 g of the strawberries with 1 tbsp icing sugar and the lemon juice into a smooth sauce. Quarter the rest.
- 2Toss the quartered strawberries with half the sauce.
- 3Whip the cream with the remaining icing sugar and the vanilla to soft, floppy peaks: stiff cream makes the mess heavy.
- 4Break the meringues into rough pieces, some large, some crumbs.
- 5Just before serving, fold the meringue and strawberries through the cream in a few strokes, leaving streaks.
- 6Spoon into glasses and drizzle with the remaining strawberry sauce. Serve at once, before the meringue softens.
