Steps
Steps
- 1Scrub the tongues under cold running water, put them in a pot with the onion, carrot, bay leaves, peppercorns and 1 tsp of the salt, and pour in the cold water to cover them by 5 cm.
- 2Bring to the boil, skim off the foam, then cover and simmer gently for 1 hour 30 minutes to 2 hours, until a skewer slides into the thickest part without resistance.
- 3Lift the tongues into a bowl of cold water for 1 minute, then peel off the thick outer skin while they are still warm — it comes away easily hot and clings once cold.
- 4Trim away the gristle at the root and cut the tongues into slices 1 cm thick.
- 5Melt the butter in a wide frying pan over medium heat until it foams, add the slices in a single layer and fry for 2–3 minutes per side, until golden at the edges.
- 6Add the garlic, the remaining salt and the ground pepper and toss for 1 minute, until fragrant but not browned.
- 7Sprinkle with the lemon juice and parsley and serve hot, with the butter from the pan spooned over.
