Steps

  1. 1
Put the coffee, sugar and 2 tbsp of the cold water in a cocktail shaker or a tall jar with a lid. The sugar goes in now, not later: it will not dissolve in the cold drink.
  2. 2
Shake hard for 30 seconds, or whisk with a milk frother, until the mixture turns into a thick, light brown foam.
  3. 3
Put the ice cubes in a tall glass and pour in the foam.
  4. 4
Top up slowly with the rest of the cold water, letting the foam rise to the rim.
  5. 5
Add the milk, stir once and serve with a straw. In Greece a frappé is meant to last the afternoon.
