Steps
Steps
- 1Cut the peel and white pith off the oranges with a sharp knife and cut out the segments between the membranes over a large bowl, catching the juice. Squeeze the leftover membranes into the bowl.
- 2Whisk the honey and lemon juice into the orange juice. This is the dressing, and its acid keeps the apples, pears and banana from browning.
- 3Core the apples and pears and cut them, skin on, into 1.5 cm dice, tipping them straight into the dressing. Peel and slice the kiwis, halve the grapes and knock the seeds out of the pomegranate.
- 4Add everything except the banana to the bowl, toss and chill for up to 30 minutes.
- 5Slice in the banana just before serving, as it softens quickly, and scatter with the torn mint.
