- 200 g dairy-free dark chocolate
- 2 tbsp ground flaxseed
- 6 tbsp water
- 200 g caster sugar
- 1 tsp vanilla extract
- 3/4 cup all-purpose flour
- 1/4 cup cocoa powder
- 1/2 tsp salt

- 1Preheat oven to 180C and line a 20 cm square baking pan with parchment paper.
- 2Make flax eggs: mix ground flaxseed with 6 tbsp water and set aside for 5 minutes to gel.
- 3Melt coconut oil and dark chocolate together in a heatproof bowl over simmering water, stirring until smooth. Cool slightly.
- 4Whisk sugar and flax eggs into the chocolate mixture. Add vanilla extract.
- 5Fold in flour, cocoa powder, and salt until just combined.
- 6Pour batter into prepared pan. Bake for 20 to 25 minutes until the top is set but the centre is still slightly soft.
- 7Cool completely in the pan before cutting into squares.
