Steps
Steps
- 1Tip the beans and their liquid into a pan and warm them over medium heat for 8–10 minutes, until bubbling and soft enough to crush between two fingers.
- 2Meanwhile crush the garlic with the salt and cumin into a paste.
- 3Crush about half the beans in the pan with a potato masher or the back of a fork, leaving the rest whole, so the mixture is thick but chunky.
- 4Stir in the garlic paste, the lemon juice and half the olive oil and cook for 1 minute more.
- 5Spoon into a shallow dish, drizzle with the tahini and the rest of the olive oil, then scatter with the tomato, parsley and chilli.
- 6Serve warm, with the flatbreads for scooping.
