Steps

  1. 1
Whisk the flour and salt with half the water into a thick, smooth paste, beating hard for 3–4 minutes, then whisk in the rest of the water. Cover and rest for at least 1 hour, or overnight in the fridge.
  2. 2
Stir the batter well; it should be like single cream. If it has thickened, loosen it with a splash of water.
  3. 3
Heat a large non-stick or crêpe pan, 28–30 cm across, over medium-high heat and grease it with a little of the butter.
  4. 4
Pour in a small ladle of batter and swirl at once to coat the base thinly. Cook for 2 minutes, until the edges lift and the underside is golden and lacy.
  5. 5
Flip the galette, lay a slice of ham in the centre, scatter with a quarter of the cheese and crack an egg on top, keeping the yolk whole.
  6. 6
Fold the four sides in towards the middle to make a square frame around the yolk, cover the pan and cook for 3–4 minutes, until the white is set and the cheese has melted.
  7. 7
Brush the edges with a little more butter, season with pepper and slide onto a warm plate. Repeat with the rest; the batter makes a couple of spare galettes, and the first is usually a tester.
