Steps
Steps
- 1Toss the chicken with 1 tbsp of the soy sauce, 1 tbsp of the Shaoxing wine and the egg white, then leave for 15 minutes.
- 2For the sauce, whisk the remaining soy sauce and Shaoxing wine with the vinegar, sugar, hoisin sauce, chicken stock and the cornflour for the sauce.
- 3Heat the oil to 175°C. Toss the chicken in the coating cornflour until every piece is dry and fully covered.
- 4Fry the chicken in two batches for 5 minutes until golden and cooked through, and drain on a rack. For extra crunch, fry it all again at 190°C for 1 minute.
- 5Pour off all but 2 tbsp of the oil. Fry the dried chillies over medium heat for 20 seconds until they darken slightly, then add the garlic, ginger and the white parts of the spring onions for 30 seconds.
- 6Stir the sauce and pour it in. Simmer for 1 minute, stirring, until it is thick enough to coat a spoon; a thin sauce turns the crust soggy.
- 7Add the chicken and the sesame oil and toss until every piece is glazed.
- 8Scatter over the sesame seeds and the green parts of the spring onions and serve at once with the rice.
