Steps

  1. 1
Soak the beans overnight in plenty of cold water; they will double in size.
  2. 2
Drain, cover with fresh water in a large pan, add the bay leaves, bring to the boil, skim, and simmer for 50–60 minutes until tender but whole. Drain, keeping 300 ml of the cooking water, and discard the bay leaves.
  3. 3
Heat the oven to 180°C/350°F. Warm 100 ml of the olive oil in a wide pan over medium heat and soften the onions, carrots and celery for 10 minutes, then add the garlic and tomato paste for 1 minute.
  4. 4
Add the tomatoes, oregano, sugar, salt and pepper and simmer for 10 minutes into a thick sauce.
  5. 5
Stir in the beans, the dill, most of the parsley and the reserved cooking water, and spread everything in a baking dish in a layer about 5 cm deep.
  6. 6
Drizzle with the remaining olive oil and bake uncovered for 50–60 minutes, until the sauce is thick and the beans on top are wrinkled and caramelised at the edges; add a splash of water if it dries out.
  7. 7
Rest for at least 15 minutes, scatter with the rest of the parsley and serve warm or at room temperature.
