Jorg Meyer's Hamburg creation — a whole handful of basil muddled into a gin sour, bright green and intensely aromatic.

  • 60 ml gin
  • 25 ml lemon juice
  • 20 ml sugar syrup
  • 20 g fresh basil
  • 1 pieces basil sprig, to garnish

    Use a genuinely large handful of basil — a few leaves will not register.

    Muddle the basil in the shaker with the sugar syrup and lemon juice. Press firmly but briefly: bruise the leaves to release the oils, do not grind them, which turns the drink bitter and grassy.

    Add the gin and fill with ice.

    Shake hard for 10 seconds.

    Double strain through a fine sieve into a rocks glass over fresh ice, to catch every fragment of leaf.

    Garnish with a basil sprig slapped once between the palms.

    Serve immediately; the vivid green oxidises within about ten minutes.
