Steps
Steps
- 1Toast the sesame seeds in a dry frying pan over medium-low heat for 3–4 minutes, shaking the pan, until golden and fragrant.
- 2Grind them while warm in a mortar to a coarse, damp paste, leaving some seeds whole. Stir in the sugar, soy sauce and water.
- 3Bring a pan of water to the boil. Holding the spinach by the leaves, dip the stems in for 15 seconds, then push in the leaves and cook for 30 seconds more. Plunge into cold water.
- 4Line the spinach up in a bundle, squeeze it firmly, cut it into 4 cm lengths and squeeze again: any water left behind thins the dressing.
- 5Toss the spinach with the sesame dressing just before serving and pile it into small mounds.
