Steps

  1. 1
Heat the oil in a pot over medium heat and fry the onion and carrot for 8 minutes until soft; add the spring onions for the last 2 minutes.
  2. 2
Take the pot off the heat, sprinkle in the flour and paprika and stir for 30 seconds until the flour has absorbed the oil.
  3. 3
Add the tomatoes, return to medium heat and cook for 5 minutes, stirring, until the sauce thickens and darkens slightly.
  4. 4
Pour in the hot water gradually, stirring so no lumps form, then season with the salt and pepper and bring to the boil.
  5. 5
Add the peas and simmer gently, uncovered, for 15 minutes for frozen peas or 25–30 minutes for fresh, until tender but still bright green.
  6. 6
Check the consistency: the sauce should loosely coat the peas, so simmer a few minutes longer if it is thin or add a splash of hot water if it is too thick.
  7. 7
Take off the heat and only now stir in the dill — added earlier it turns grey and loses the fresh flavour the stew depends on.
  8. 8
Rest for 5 minutes and serve warm with bread and pickled peppers.
